My “ go to “ is always in the fridge. Italian hot stuffed cherry peppers with puréed prosciutto with herb and garlic cheese and just a few tablespoons of fine breadcrumbs to hold it all together.

Some boneless pork ribs, I made for my employees, they had a nice lunch. served with Jasmin rice. yum

I went to a classic car auction in Portland, in the morning we walked out the hotel and a block away was a nice little place, so I gave it a go, turned out they served a fantastic comfort food breakfast, Biscuits and gravy…
