Your Salsa, Please!

I was sitting in an MTT one day earlier this week. One of the players started chatting about having spent the day making and canning a huge batch of salsa with home-grown veggies . She promised to post the recipe here if there’s ever a salsa thread. And voila, we have a salsa thread!

Recipes, anyone?

Here’s mine:
Salsa Easily
1 13 oz. can Mexican-style stewed tomatoes
1 13 oz. can fire roasted diced tomatoes
6-8 green onions, cut into thirds
2 tablespoons of minced garlic
4-5 whole jalapenos (2 with seeds, the rest de-seeded)
Entire bunch of cilantro, rinsed
Put everything but the cilantro in the blender and blend. Add the cilantro and blend again. Chill for a couple of hours. Serve with chips or on tacos.

Here’s mine:

1 28 oz can, whole plum tomatoes, drained and chopped
3 small cans chopped green chilis (preferably Hatch) drained, chopped if needed
1 large onion, peeled and diced
2 tsp kosher salt
2 tsp sugar
4 Tbsp red wine vinegar

Combine all ingredients and chill for at least 5 hours.

Enjoy :blush:

I Triple this to make about 7 qtrs. its good my family loves it plus makes nice Christmas gifts.

My Salsa Recipe:

Go to the pantry
Grab a jar of Pace Medium Chunky Salsa
Unscrew lid
Dump generous amount into dish
Serve with On the Boarder chips (or your favorite)

Only can lab tested recipes. I wouldn’t use a recipe for canning that someone posted online unless they can prove that it’s a tested recipe. National Center for Home Food Preservation | NCHFP Publications

People have been canning for hundreds of years and I don’t know of anyone dying from it, just ask my 101 year old grandmother. Salsa anyone? :+1:t2::blush:

Typical.

I know that botulism is a problem in canning and it can kill. I’m not sure the recipe so much as the process needs vetting.
